72 TIMELESS MAGIC Serves 1 INGREDIENTS 1 whole artichoke petals heart 2 lemons 1 ripe diced avocado 1 small whole diced tomato 2 spears asparagus sliced diagonal Mixed greens WARM RED WINE VINAIGRETTE cup shallots finely diced 1 cup red wine vinegar 2 cups olive oil cup sugar Basil garnish Salt pepper to taste Makes extra refrigerate up to a month PREPARATION Cook the artichoke with the whole lemons in water for about 30 minutes Take the petals and arrange on edges of serving platter Add mixed greens to center Dice the artichoke heart In a medium sauté pan put cup vinaigrette and add artichoke heart avocado tomato asparagus and heat just until warmed and vegetables coated In a small bowl combine shallots red wine vinegar olive oil sugar and salt and pepper Whisk until emulsifies Pour over mixed greens add garnish and serve with additional vinaigrette on the side Original Artichoke Salad CLASSIC PRESENTATION
